Avocado and strawberry caprese

Ingredients

  • 2 ripe avocado, seed and peel discarded, flesh cut into cubes
  • 450 g ripe strawberries, trimmed and quartered
  • 340 g cherry or grape tomatoes, halved
  • 225 g baby mozzarella balls (bocconcini), drained
  • extra virgin olive oil
  • sea salt and black pepper
  • handful of basil leaves

Instructions

  • In a large bowl, add the avocado, strawberries, tomatoes, and mozzarella. Drizzle with olive oil and season generously with sea salt and black pepper. To serve, top with basil and eat immediately.
